The Alba truffle season is finally here, and at Hillenberg, we’re celebrating with three dishes where the renowned white truffle from Piedmont, Italy, takes center stage. Known as one of the most exclusive truffle varieties, the Alba truffle is highly anticipated each fall, and we’re excited to offer our guests the chance to enjoy this unique flavor experience.
Our menu features a gougère, a French pastry filled with Gruyère cream, Parmesan, and Alba truffle – a dish that opens the palate for the evening. We’re also serving a tarte flambée with cream cheese, oyster mushrooms, and Alba truffle, where the truffle’s aroma meets the smooth, creamy cheese and earthy mushrooms. Lastly, there’s a risotto with chanterelles, sage, and brown butter, topped with Alba truffle; the risotto is available as both a starter and a main course.
To pair with these dishes, we’ve selected mature wines from our cellar, served by the glass and chosen to complement the truffle’s flavors. One highlight is a Barbaresco from 1989, which enhances the truffle’s character and brings out the best in the meal.
